Monday: Caldo de Pollo (chicken & rice soup with veggies and mexican inspired seasoning – cumin in particular)

Tuesday: Boneless country ribs and coleslaw

Wednesday: Cauliflower bake (meatless)

Thursday: Chicken cutlet sandwiches with carrot souffle

Friday: Stuffed portobella mushroom caps
