Easy Vegan Chili

2 cups brown rice

1/2 cup soy sauce

1 (15 oz) can black beans

1 packette “TastyTime” Madras Lentils and sauce* (available at Costco)

2 cloves garlic, minced

Put Brown Rice, 3 1/2 cups water, and soy sauce in slow cooker on high for 3 hours. Add beans, lentils and garlic, stir well and simmer on low another 1-2 hours. Serve over vegan spoonable cornbread.

*I tossed the box the packettes came in to make room in the cupboard. The ingredient list was on the box. The samples person at Costco said it was vegan, so I have to take her word for it this time. Seems like I saw it on the box, too. If you can’t find this tasty goo, or want to be more sure of the vegan aspect, substitute 1 to 1 1/2 cups cooked lentils and your favorite vegan tomato sauce with your choice of spices like chili powder, cayenne pepper, etc.

    • Jon’s been into brown rice lately. I’ve made it before with white rice (that Calrose basmati rice that I like so much). Of the two, I liked the white better, too. Was a clearer background for the chili spice.
