My goal for this week is spoil the Padawan rotten before school starts on Thursday. Have a fist full of coupons (thank you Giant Eagle) for some of her faves, so it’s kid-chow week.
Monday – Meatloaf with sweet potato mash (shhh – don’t tell her sweet potatoes in the regular mashed potatoes adds vitamin A and fiber)
Tuesday – Chicken nuggets and french fries (this meal has no redeeming value whatsoever, but it tastes good)
Wednesday – Green Bean and Tofu fried rice (I know, right?)
Thursday – Belgian Waffles (with fruit and whipped cream) and turkey bacon
Friday – Chicken Hot Dogs and onion rings (shhh – don’t tell her that onions are actually a decent source of fiber, vitamin c and potassium)
