Gobble Goo

Why my daughter started calling this dish-o-leftovers “gobble goo” is beyond me. I think it really translates into “this is crap” and she was trying to find a polite way to express her utter revulsion toward anything containing cooked green vegetables.

2 cups of rice, cooked by your favorite method with your favorite seasonings

breadcrumbs

butter

3 eggs, beaten

2 cups shredded sharp cheddar (or your favorite cheese)

leftover meat and/or veggies (this week it was ham and broccoli)

1/4 cup minced red onion, OR 2 TBS dried chives OR a minced shallot (optional)

salt

pepper

Dice leftovers, mix rice, leftovers, onion (or other aromatics), salt, pepper (or whatever other seasonings you think would taste good matched with whatever leftovers you are using), eggs and 1 cup of shredded cheese. pour into a lightly oiled 9×13 baking dish.

Sprinkle bread crumbs over top. Dot with butter, and sprinkle with remaining shredded cheese.

Bake 375 for 40 minutes or until knife inserted into the center comes out relatively clean and the cheese on top is lightly browned.

Finish by figuring out some way to get a finicky kid to eat it.

To make it glycemic-friendly, use brown rice. To make it lipid-friendly use a lower fat cheese and egg whites in place of the whole eggs.
