Busy Mama Meatloaf

This take a huge, processed shortcut, but it is tasty and is in the oven in no time.

1 -kg stuffing mix (I like cornbread or whole versions) prepared per package instructions

1 lb ground turkey sausage (or your ground meat of choice)

1 egg

1 cup shredded cheese

ketchup

garlic powder

salt

pepper

Preheat oven to 375. Lightly oil 9×13 baking dish

Mix meat, prepared stuffing, egg, lg pinch of salt, several grinds or 1/8 tsp black pepper, a sprinkle of garlic powder and cheese.

Place in the middle of baking dish, and form into a loaf shape…it won’t fill the dish, but that will allow it to spread a little bit and give you more of the chrunchy-sweet top that everyone seems to like.

Coat the top of the loaf with ketchup. Sprinkle top with a little bit of garlic powder

Bake 40 minutes or until internal temperature exceeds 170 degrees. Allow to rest for 5 minutes after removing from the oven to allow loaf to ‘set’.

While it bakes, toss together your side dishes, set the table, tell the kids to hang up their coats and wash their hands, have a glass of wine…you get the idea.

It does have a final texture that is soft, almost fluffy and may tend to fall apart a bit, but what it lacks in pretty, it makes up for in tasty.
